Test-config: traversal updateQueryData.sh fails to update models and queries

When the traversal docker image is deployed and updateQueryData.sh is run, all the calls fail because the logdirectory is not writable by the aaiadmin user. Need to add a logback appender and appender-ref to create the directory at docker instantiation.
